Thai Chicken Pizza

1 precooked pizza crust
1- 7 oz jar peanut sauce
¼ C peanut butter
8 oz boneless, skinless chicken, cooked and cut into strips
1 C Italian cheese, shredded
1 bunch green onion, chopped
½ C bean sprouts (optional)
½ C carrots, chopped or grated
½ C zucchini, chopped or grated
½ C cilantro, chopped
1 T roasted peanuts

Mix the sauce and peanut butter together and spread on pizza crust. Then place cooked chicken, green onion and cheese on top. Bake at 400 degrees F for 8-12 minutes. Sprinkle  on the rest of the ingredients and serve.

Dan’s Good Dip

Yields: approximately 6C (or as my parents would say, “who knows? a LOT!”)

2 cans Rotel, not drained
9 oz chopped green chilies
2 small cans chopped black olives
1 C green olives, chopped
1 medium tomato, chopped
4-6 green onions, chopped
½ red onion, diced
½ C fresh cilantro, chopped
2 jalapeño peppers, diced fine
2 T Worcestershire sauce
1 tsp seasoned salt

Mix all ingredients together. Chill and serve with chips or vegetables.

Roasted Corn on the Cob with Cilantro Lime Butter

Servings: 6 ears of corn, ¾ C butter

6 ears corn, shucked
1 C unsalted butter, room temperature
¼ C cilantro, chopped
1 lime, zested and juiced
2 tsp salt
¾ tsp cayenne pepper

Preheat oven to 400 degrees F. Put the butter in a mixing bowl and, using a rubber spatula, mix in the cilantro, lime zest, lime juice, salt and cayenne. Coat each ear of corn in 2 tablespoons of the butter mixture, and wrap individually in foil. Roast until hot and steaming, about 25 minutes. Serve with extra butter on the side. Refrigerate extra butter for later use.
