Apricot Chicken

Ingredients:
1-2 lbs boneless skinless chicken breasts
8 oz bottle Russian salad dressing
12 oz jar apricot preserves
2-3 C rice, prepared

Directions:
Arrange chicken in a slow cooker, set aside. Combine salad dressing and preserves; pour over chicken. Cover and cook on low setting for 6 hours. Serve over a bed of rice.

Yummy Chicken Salad

Ingredients:
diced chicken
1 small can pineapple
1 small package cream cheese, softened
½ C raisins or craisins
slivered almonds

Directions:
Mix everything together and serve with crackers or on a croissant.

Thai Chicken Pizza

Ingredients:
1 precooked pizza crust
1- 7 oz jar peanut sauce
¼ C peanut butter
8 oz boneless, skinless chicken, cooked and cut into strips
1 C Italian cheese, shredded
1 bunch green onion, chopped
½ C bean sprouts (optional)
½ C carrots, chopped or grated
½ C zucchini, chopped or grated
½ C cilantro, chopped
1 T roasted peanuts

Directions:
Mix the sauce and peanut butter together and spread on pizza crust. Then place cooked chicken, green onion and cheese on top. Bake at 400 degrees F for 8-12 minutes. Sprinkle  on the rest of the ingredients and serve.

The Mister’s Favorite Chicken Marinade

Yields: enough for 4-6 chicken breasts

Ingredients
:
½ C white wine
2 T olive oil
1 T vinegar
2 tsp dried basil
1 tsp dried oregano
½ tsp onion salt
2 clove garlic, minced

Directions:
Mix ingredients in a plastic re-sealable bag. Place chicken in marinade and let sit at least 30 minutes, but as long as 24 hours! This is a great recipe for the grill.

Million Pines City Chicken Marinade

Yields: approximately 1¾ C

Ingredients:
1 C vegetable oil
¾ C lemon juice
1 T salt
2 tsp paprika
2 tsp sweet basil
2 tsp thyme
2 tsp onion powder
1 tsp garlic powder

Directions:
Combine all ingredients for marinade. Marinate desired number of chicken pieces over night. Bring to room temperature and drain. Grill chicken, basting with reserved marinade while cooking. Discard marinade.

Chicken Breast with Mustard Sauce

Servings: 4

Ingredients:
4 breasts, pounded flat
1 T butter
1 T oil
salt and pepper
3 T chopped shallots
2 T Dijon mustard
½ C heavy cream
chopped parsley

Directions:
In nonstick sauté pan over medium low heat, melt butter w/oil. When foaming, add chicken and season w/salt & pepper. Brown on both sides. Transfer & keep warm. Pour off excess fat, and then add shallots and cook until translucent. Add mustard and cream, and raise the heat to medium. Scrape up brown bits. Cook until thickened, and blend about 3 minutes. Return chicken to pan. Coat and heat through. Pour sauce over chicken to serve. This dish is great with a nutty brown rice pilaf.

Chicken Packets

My oldest son’s favorite!

Servings: 8

Ingredients:
2 C chicken, cooked and chopped
3 oz package cream cheese, softened
1 T chives, chopped
2 T milk
salt and pepper to taste
½ C seasoned croutons, crushed
2 packages refrigerated crescent rolls
¼ C butter, melted

Directions:
Preheat oven to 350 degrees F. Mix chicken, cream cheese, chives, milk, salt, and pepper in medium bowl (mixing with hands works best). Crush croutons. Unroll crescent rolls making 8 rectangles of dough. Press dough along perforations so halves won’t separate. Place about ¼ cup chicken mixture into the center of each rectangle. Fold dough over filling and pinch edges to seal tightly. Dip each packet into melted butter and coat with crouton crumbs. Place on baking sheet. Bake for 20 minutes.
