Chicken Fried Rice

Servings: 4

4 large egg whites
½ C scallions
2 medium garlic cloves, minced
12 oz uncooked chicken, cut into ½-inch cubes
½ C carrots, diced
2 C cooked brown rice
½ C frozen peas, thawed
2 T soy sauce

Cook egg whites and set aside. Saute garlic and onions about 2 minutes. Add chicken and carrots. Saute until chicken is golden and cooked. Stir in egg whites, rice, peas, and soy sauce. Cook 1-2 more minutes. Enjoy!
